Making it "REID-able"

Grilled Watermelon Salad

Who knew? I recently discovered grilled watermelon and it's amazing! The sweetness of the watermelon pairs well with a lot of crunchier veggies you may already have on hand. It's also yummy with pumpkin seeds and even steak.

The below yields four servings.

A tip from Brevi

8 cups spring greens

4 small radishes, sliced or grated

1/2-1 cucumber, quartered

4 Tb pumpkin seeds

2 cups diced watermelon

1 tsp avacado oil

1 lime

Mix all ingredients and plate.

If you like the peppery taste, try using arugula to counter the watermelon's sweetness. Chopped bell pepper would also work well here.

1 tsp avacado oil

Toss the watermelon with the oil, then place on a heated grill. Grill on each side for about 1-2 minutes, or until grill marks are present. Divide and transfer to each salad.

Squeeze fresh lime all over each plate to tie everything together.

Instead of lime, many recipes call for balsamic vinegar to work as the acid. That generally does not jive with REID, but I wanted to present it as an option if that works for your family. We've also used poppyseed dressing - also not REID approved, but yummy on the fruit and if you add steak.
