1 lb boneless chicken thighs
1/3 cup honey
Juice from 2 oranges (about 1/2 cup)
1 Tb avocado oil
2 tsp garlic granules

2 cups raw broccoli
1 large red or yellow bell pepper

Preheat oven to 425 degrees.
On saute mode in the Instant Pot, cook mushrooms in a little bit of avocado oil until tender. Turn pot off and then blend with water to make a puree.
This mushroom puree attempts to bring in umami flavor stemming from its naturally occuring glutamate, which is bound glutamate. Unbound glutamate is free glutamate (msg) and is more often problematic. Bound or not, however, its tolerance is very individual.

Trim the chicken of any fat and skin. Coat the bottom of the Instant Pot with a little avocado oil. Place all step 2 ingredients in the pot along with the mushroom puree and coat chicken. Set Instant Pot on manuel high for 8 minutes.
If you're concerned with yeast or SIBO, the honey in the recipe may be problematic. We have not tried this recipe without the honey.
2 cups raw broccoli
1 large red or yellow bell pepper

Coat peppers with avocado oil and sprinkle with salt and pepper. Spread out on one side of lined baking sheet and roast in preheated oven for 5 minutes. Meanwhile, coat broccoli with avocado oil, salt and pepper. When the 5 minutes is up, spread brocolli on other side of baking sheet and continuing roasting all for another 15 minutes or until tender and lightly charred.

When Instant Pot is done, quick release pressure and trim off any fat that raised to the surface. Remove chicken to shred. With the pot left on warm, add the cassava flour and water to the pot and simmer 1-2 minutes to thicken sauce. Add the chicken and vegetables when done.
